Grilled Salmon Avocados and Peaches Clean Eating Recipe

Makes 4 servings

Ingredients

  • 4 salmon fillets (about 4–6 oz each)
  • 2 ripe but firm avocados
  • Optional: 2–3 fresh peaches or pineapple slices for grilling

Cilantro Garlic Lime Marinade:

  • 1/4 cup avocado oil, olive oil, or melted coconut oil
  • 1 large bunch cilantro, leaves only, coarsely chopped
  • Juice of 2–3 large limes
  • 2–4 cloves garlic, minced
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

Combine all marinade ingredients in a small bowl and whisk until well blended. The dressing is bright and citrusy, with cilantro and garlic for fresh flavor.

For the Salmon:

  • Rub the marinade evenly over 4 salmon fillets.
  • This amount of marinade is enough for four 4–6 oz fillets. If you prefer more sauce, double the marinade.
  • Cover and refrigerate the salmon for 2–4 hours to allow the flavors to penetrate.
  • Before grilling, take the salmon out of the refrigerator and let it sit at room temperature for about 20 minutes.
  • Preheat the grill to medium heat and lightly oil the grates to prevent sticking.
  • Grill the salmon until it flakes easily with a fork but remains tender—timing will depend on thickness, generally 4–6 minutes per side for typical fillets.

Grilled Avocado:

  • Halve the avocados and remove the pits. Brush the cut sides lightly with extra marinade or a little oil to prevent sticking and to add flavor.
  • Place avocados cut-side down on a medium grill and cook 3–4 minutes per side, just long enough to warm and develop a light char. The goal is to gently warm the avocado and enhance its flavor without turning it mushy.
  • Optionally squeeze a little fresh lime over the warm avocado before serving for a bright finish.

Grilled Peaches or Pineapple (Optional):

  • Slice peaches or pineapple and brush with a mixture of lime juice, a little oil (avocado or olive), and a touch of fresh cilantro. For a hint of sweetness, add a small drizzle of raw honey.
  • Grill fruit briefly—2–3 minutes per side—until warm with light grill marks. These sweet notes complement the savory salmon and creamy avocado.

Tips for Success:

  • Brush the hot grill with avocado oil or coconut oil spray to prevent sticking.
  • If doubling the marinade for the avocado, prepare it separately from the salmon marinade to avoid cross-contamination if the salmon was raw in it.
  • Serve the salmon with warm avocado halves and grilled peaches for a colorful plate. Garnish with extra cilantro leaves and lime wedges.
