How to Make a Soul Food Dinner

Slow Cooker Method

  1. In a small bowl, combine the paprika, dried thyme, salt, garlic powder, onion powder, and black pepper. Spray the slow cooker with cooking spray or rub lightly with oil.
  2. Add the chicken thighs to the slow cooker and rub the seasoning into the meat. Reserve a little seasoning to sprinkle on the sweet potatoes if you like.
  3. Place the greens on top of the seasoned chicken and scatter the garlic over the greens. Pour the apple cider vinegar and chicken broth around the edges.
  4. Arrange the sweet potato rounds on top of the greens in an even layer.
  5. Cover and cook on HIGH for 3–4 hours or LOW for 6–8 hours, until the chicken is tender and cooked through and the sweet potatoes are fork-tender.

Instant Pot Method

  1. Pour 1 cup of chicken broth into the Instant Pot insert.
  2. Season the chicken thighs with the spice mixture and add them to the pot.
  3. Layer the sweet potatoes on top of the chicken. Close the lid, seal the valve, and set to high pressure. Cook 8 minutes for boneless thighs or 10 minutes for bone-in thighs.
  4. When the timer finishes, perform a quick release. Carefully remove the sweet potatoes and chicken with tongs and set aside on a plate.
  5. Add the greens to the pot. Close and seal the lid again, then cook on high pressure for 5 minutes. Quick release pressure when done.
  6. Return the chicken and sweet potatoes to the pot or serve plated with the braised greens spooned over the top.
