  • Pork – pork shoulder steaks are ideal because they are boneless and have a little fat to keep the meat tender. You can substitute pork chops or pork loin steaks if you prefer a leaner cut.
  • Mushrooms – chestnut mushrooms add extra flavour, but use any variety you like. Sliced portobello mushrooms are especially good for a meaty texture.

  • Season and sear the pork: pat the steaks dry, season both sides and brown in a hot pan with a little oil until golden.
  • Cook the veg: remove the pork, then fry sliced onions, mushrooms and garlic until softened and lightly caramelised.
  • Make the sauce: sprinkle the vegetables with flour, stir to coat, then gradually pour in chicken stock while stirring to form a smooth sauce.
  • Finish the sauce: stir in tomato puree, white wine vinegar and cream. Return the pork to the pan and simmer for about 10 minutes so the sauce thickens and the pork finishes cooking.

Ingredients

  • 3 tbsp olive oil
  • 4 boneless pork shoulder steaks
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 onion, peeled and thinly sliced
  • 6 mushrooms, sliced (use chestnut or your favourite)
  • 3 cloves garlic, minced
  • 2 tbsp plain (all-purpose) flour
  • 360 ml (1 1/2 cups) chicken stock
  • ½ tbsp tomato puree
  • ½ tbsp white wine vinegar
  • 60 ml (1/4 cup) double (heavy) cream

To Serve:

  • 2 tbsp freshly chopped parsley

Instructions

  • Heat 2 tbsp of the oil in a large frying pan over medium-high heat.
  • Season both sides of the pork steaks with 1/4 tsp salt and 1/4 tsp pepper, then place them in the pan and fry for 6–7 minutes, turning once, until browned. Remove and set aside.
  • Add the remaining 1 tbsp oil to the pan, then add the sliced onion and mushrooms with the remaining seasoning. Fry for about 5 minutes, stirring often, until the onions soften.
  • Add the garlic and fry for another minute, stirring.
  • Sprinkle the flour over the onions and mushrooms and stir to coat evenly.
  • Pour in the chicken stock while stirring to create a smooth sauce, then add the tomato puree, white wine vinegar and cream and stir to combine.
  • Return the pork steaks to the pan and simmer for about 10 minutes until the sauce thickens and the pork is heated through.
  • Serve the steaks topped with chopped parsley and plenty of sauce.

Notes

Can I make it ahead?

This is best eaten straight away for the most tender pork, but it can be made ahead. Cool quickly, cover and refrigerate.

To reheat, take it out of the fridge 30 minutes beforehand. Reheat covered in a 180°C/375°F oven for 20–25 minutes until piping hot, stirring occasionally and adding a splash of stock or water if the sauce is too thick. Alternatively, reheat gently in a covered pan over medium-low heat for 15–20 minutes.

Ingredient swaps

  • Replace the mushrooms with vegetables such as diced courgette (zucchini) or green beans.
  • Substitute pork shoulder with pork chops or pork loin steaks.
  • Use crème fraîche instead of cream for a slightly tangier finish.
